About the Recipe
Packed with refreshing greens, tuna and rice.

Ingredients
1 cup (100g) canned or frozen edamame
250 grams brown rice
1 small (300 grams) green capsicum, chopped
2 trimmed celery stalk, sliced finely
2 green onions, trimmed and sliced finely
1 cup parsley leaves, chopped
2 tbsp mayonnaise
2 tbsp Indian lime pickle, chopped
250 grams tuna slices in oil, drained
2 lime wedges, to serve
Preparation
1. Bring a small pan of water to the boil; cook the edamame for 1 minute (if frozen). Drain.
2. Heat rice according to nstructions.
3. Transfer rice to a bowl and arrange the capsicum, celery, green onion, parsley leaves and edamame. Top with mayonnaise, lime pickle and tuna slices.
4. Serve with fresh lime wedge.
